Hull’s Biscuits and Sausage Gravy

Biscuits

Ingredients:

  • 250 grams all-purpose flour
  • 15 grams baking powder
  • 5 grams salt
  • 115 grams cold unsalted butter, cut into small pieces
  • 180 milliliters whole milk or buttermilk

Instructions:

  1. Preheat the Oven: Preheat your oven to 230°C (450°F).
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, and salt.
  3. Cut in Butter: Add the cold butter pieces to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Add Milk: Make a well in the center of the mixture and pour in the milk. Stir just until combined and the dough starts to come together.
  5. Knead Dough: Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Do not overwork the dough.
  6. Roll and Cut Biscuits: Roll the dough out to about 1.25 cm thick. Use a biscuit cutter or a round glass to cut out biscuits and place them on a baking sheet.
  7. Bake: Bake in the preheated oven for 10-12 minutes, or until the biscuits are golden brown on top.
  8. Cool: Remove from the oven and let cool on a wire rack.

Sausage Gravy

Ingredients:

  • 1 pack of Hull’s Pork Sausages
  • 30 grams all-purpose flour
  • 480-720 milliliters whole milk
  • Salt and black pepper to taste

Instructions:

  1. Cook Sausage: In a large pan over medium heat, cook the sausage, breaking it up with a spoon, until it is browned and cooked through thoroughly.
  2. Add Flour: Sprinkle the flour over the cooked sausage. Stir well to coat the sausage and cook for about 1-2 minutes to get rid of the raw flour taste.
  3. Add Milk: Gradually add the milk, stirring constantly. Start with 480 milliliters and add more if you prefer a thinner gravy.
  4. Thicken Gravy: Continue to cook and stir until the gravy thickens, about 5-7 minutes.
  5. Season: Taste and season with salt and plenty of black pepper.

Serving

  1. Assemble: Split the warm biscuits in half and place them on plates. Spoon the sausage gravy over the top of the biscuits.
  2. Enjoy: Serve immediately while hot.
