Hull’s Breakfast Burrito

Ingredients

  • 4 large flour tortillas
  • 1 Hull’s Mini Breakfast Pack (casings removed if desired)
  • 4 large eggs
  • 1/4 cup milk (optional, for fluffier eggs)
  • Salt and black pepper to taste
  • 1 cup shredded cheddar
  • 1 cup diced tomatoes
  • 1/2 cup diced onions
  • 1/4 cup chopped fresh cilantro
  • Salsa, hot sauce, or sour cream for serving (optional)

Instructions

Cook the Breakfast Pack:

  • In a pan over medium heat, cook the breakfast sausages and veg roll, breaking it apart with a spatula, until browned and cooked through. Remove excess fat if needed.

Scramble the Eggs:

  • In a bowl, whisk the eggs and milk (if using) together. Season with salt and black pepper. Pour the egg mixture into the pan with the cooked sausage/veg roll. Cook, stirring occasionally, until the eggs are just set.

Assemble the Burritos:

  • Warm the flour tortillas in the pan or microwave for about 10 seconds to make them pliable. Place a portion of the scrambled eggs and sausage/veg roll mixture in the centre of each tortilla.

Add Toppings:

  • Sprinkle shredded cheese over the eggs and sausage/veg roll. Add diced tomatoes, onions, and fresh corianderon top.

Roll the Burritos:

  • Fold in the sides of the tortilla and then roll it up from the bottom to create a burrito.

Serve

  • Optionally, heat the assembled burritos in the pan for a minute on each side to melt the cheese and give the tortilla a slight crispiness.

Garnish and Enjoy:

  • Serve the sausage breakfast burritos with salsa, hot sauce, or sour cream on the side, if desired.
